The Humble Side Salad - 1st edition
Ingredients
- Several big handfuls of mixed greens or spinach
- 3 sprigs of spring onion diced
- 3 sticks of celery diced
- 3 tomatoes diced
- 1 zucchini cut into discs
- 1 yellow capsicum sliced
- ½ avocado diced
- 1 knob goats cheese
- As much basil as you like!
Instructions
- Place leaves in a bowl or on a platter.
- Microwave or blanch zucchini until tender and then run under cool water.
- Add spring onion, celery, tomatoes, capsicum, avocado and zucchini.
- Top with goats cheese and basil.
Notes
I’m not usually one to dress my salads but a drizzle of extra virgin olive oil would work wonders here.
Pump up the protein by serving with some steamed fish.
